Family Fav Recipe for tonight

Dinner tonight is a recipe that i got from a book called Back to Protein. I use to be on a low carb diet and it was one of the things i would make that everyone liked in fact i use quite a few recipes from that book. Some of them are strange because of the ingredients they use (like crushed pork skins!) that says it all right there :) Anyway onto the recipe:

Encore Chicken al a King

2 Tbsp. butter
1 cup sliced mushrooms
1/2 cup chicken broth (used organic)
2 cups diced cooked chicken
1/4 tsp black pepper
1/2 cup sour cream
1 egg yolk

Melt the butter in a medium skillet, add mushrooms and stir fry til tender. Add the broth, chicken, and pepper. Bring just to a boil. Combine the sour cream and egg yolk in a small bowl and spoon a little of the hot sauce into the sour cream and stir. Repeat until you double the quantity. Pour the sour cream mixture into the skillet, stir and heat through but dont boil.
Serve over rice or noodles or if you are on a low carb diet just use like it is.

The entire family loves this recipe so i usually double or triple it.

Detering's is open for Cherry season...Yea!!!!

We went out to Detering's to pick up some cherries to add to our freezer stash....at $1 a lb we picked about 10 lbs and we are going to go back on Tuesday to pick more. So i am on the lookout for cherry recipes to use up the MANY lbs that i know we will end up getting. I think we picked 45lbs last year and that was more then enough to last til this year (2 lg Ziploc bags left from last years stash) So i am thinking about 35lbs or so. And now that i have a cherry pitter it makes it even better.

Vietnamese Coffee Popsicles

I made these earlier today and they were so good that they are now gone they were that good. If you love coffee like me you will have to try them. ( Posted this last year and with the heat coming i thought this would be a good one to redo!.......I am going to use HM sweetened condensed milk this time though. If you like coffee like i do you will LOVE these...yummy!)

Time is zooming by........

Time has been slipping by lately. As it gets closer to the end of the school year there is so much to do. My oldest son is graduating from H.S. and my youngest one is starting kindergarten in September, i have been helping a friend of mine move from her apt. into a house which meant a LOT of cleaning to get back her deposit (which she needs) , DH has had his pay cut by 1/4 so we have had to rethink our budget and tried to see what we can cut. All in all it has been VERY busy around here. I am still planning menus but to get them posted is a totally different thing.

I have my monthly calendar with my meals so i may post what we are eating after we have already eaten it. Does that make sense??

Making due with 1 car

Did the grocery shopping today and again i forgot that it was the 1st of the month which means everyone that gets a check from the govt was there doing their shopping.......needless to say it was a very long trip and i didn't even get a chance to finish it because DH called me (at the store) and told me,

"I wont be home when you get back because i got called in early to work"

OK so i paused and said "No problem. So are you walking to work?"

Well i could almost hear DH's hand smack his forehead as he said "Ugh, that's right you have the car!"

So i went racing ( seriously) through the store grabbing what i had left on my list and i left the paper/plastic stuff to get at Target tomorrow. Oh the perils of having only 1 car working....you save $ on gas but sometimes stuff like that happens.

Getting back into the swing of things....

I have really been slacking on making HM meals as there are times when i just get so tired that i cant seem to function. I know when it happens and why but i still cant seem to function and then add in medicine that makes me sleepy and you can forget about a HM meal. This last week we had Taquitos, fish sticks, corn dogs and went out to eat 2 xs! Yikes!
This next month i really going to work on getting back in front of the oven and start cooking. Tomorrow i will be going shopping so we will be having cereal for breakfast.

Breakfast: Cereal/Milk/apple slices
Lunch: Rice with Cheese/Carrots(Leftovers)
Dinner: BBQ Chicken($2.62) (.25 c)/Rice(free) /Corn (.50 c) 6 servings (56 cents each)

To spend or not to spend......

I am really wanting to go out and get a new winter wardrobe (for next year :) as there are so many great sales going on as far as clearance stuff and there are so few people at the mall. Oh man i could go crazy! I went into Sears the other day to get a pair of boots replaced for my DD as she has ruined the heels and they are covered under Sears Kidvantage (so glad we did this!) well to get to the shoe department i had to go by the women's clothing and there were all these wonderful long sweaters marked down to $8 to $10 each so i picked up about 4 of them, walked around with them and after about 20 minutes or so i just couldn't bring myself to buy them so i put them back.

I just couldn't justify spending "that much" on clothing. It is funny but i can go into a store and pick up stuff for the kids no problem but when it comes to me i just don't see it as a need but more like a "want" I will probably go out to the thrift stores this weekend but even then i have a hard time spending $3 on a sweater .......and i know i am not the only one who does this.
